I guess that's why you're not the boss now, huh? The danger from the asbestos is in the dust. If it is cut wet, there is no dust. Also, a respirator and some tyvek suits wouldn't hurt you either.

Do it outside on some sort of frying mat. The oil will stain whatever it touches.
Make sure the turkey is fully thawed out, take it out of the freezer 3-4 days before.
Only fill the pot halfway and...
